Dutch Brewery Burns Iron as a Clean, Recyclable Fuel (newatlas.com) 127

Many industries use heat-intensive processes that generally require the burning of fossil fuels, but a surprising green fuel alternative is emerging in the form of metal powders. Ground very fine, cheap iron powder burns readily at high temperatures, releasing energy as it oxidizes in a process that emits no carbon and produces easily collectable rust, or iron oxide, as its only emission. From a report: If burning metal powder as fuel sounds strange, the next part of the process will be even more surprising. That rust can be regenerated straight back into iron powder with the application of electricity, and if you do this using solar, wind or other zero-carbon power generation systems, you end up with a totally carbon-free cycle. The iron acts as a kind of clean battery for combustion processes, charging up via one of a number of means including electrolysis, and discharging in flames and heat. Recently, Swinkels Family Brewers in the Netherlands has become the first business in the world to put this process to work at an industrial scale. The company has been working with the Metal Power Consortium and researchers at TU Eindhoven to install a cyclical iron fuel system at its Brewery Bavaria that's capable of providing all the heat necessary for some 15 million glasses of beer a year.

Apple Is Poaching From Google's iPhone Hacking Team (vice.com) 18

Apple has poached a key member of Google's Project Zero, a hacking team at Google that has found dozens of critical vulnerabilities in Apple's iOS and other critical Apple software. From a report: Last year, Apple and Google fought over a series of vulnerabilities that Project Zero discovered in iOS, with Apple suggesting that Google was overselling the vulnerabilities. About a year later, Brandon Azad announced on Twitter at the beginning of October that he was leaving Google's elite team of hackers to join Apple. "My teammates at Project Zero have been among the kindest and smartest people I've met, and I've learned so much from them," Azad wrote. "I'll really miss working alongside everyone on the team. Thank you all for these wonderful experiences, and keep on hacking!" Azad has been widely considered one of the best iPhone hackers who didn't work for Apple, being named by Apple in countless security advisories, and presenting highly technical findings on Apple's products at major cybersecurity conferences around the world. Last year, Motherboard profiled Project Zero and revealed that Apple had been trying to poach a colleague of Azad, Ian Beer.

ZDNet Argues Linux-Based Windows 'Makes Perfect Sense' (zdnet.com) 100

Last week open-source advocate Eric S. Raymond argued Microsoft was quietly switching over to a Linux kernel that emulates Windows. "He's on to something," says ZDNet's contributing editor Steven J. Vaughan-Nichols: I've long thought that Microsoft was considering migrating the Windows interface to running on the Linux kernel. Why...? [Y]ou can run standard Linux programs now on WSL2 without any trouble.

That's because Linux is well on its way to becoming a first-class citizen on the Windows desktop. Multiple Linux distros, starting with Ubuntu, Red Hat Fedora, and SUSE Linux Enterprise Desktop (SLED), now run smoothly on WSL2. That's because Microsoft has replaced its WSL1 translation layer, which converted Linux kernel calls into Windows calls, with WSL2. With WSL2 Microsoft's own Linux kernel is running on a thin version of the Hyper-V hypervisor. That's not all. With the recent Windows 10 Insider Preview build 20211, you can now access Linux file systems, such as ext4, from Windows File Manager and PowerShell. On top of that, Microsoft developers are making it easy to run Linux graphical applications on Windows...

[Raymond] also observed, correctly, that Microsoft no longer depends on Windows for its cash flow but on its Azure cloud offering. Which, by the way, is running more Linux instances than it is Windows Server instances. So, that being the case, why should Microsoft keep pouring money into the notoriously trouble-prone Windows kernel — over 50 serious bugs fixed in the last Patch Tuesday roundup — when it can use the free-as-in-beer Linux kernel? Good question. He thinks Microsoft can do the math and switch to Linux.

I think he's right. Besides his points, there are others. Microsoft already wants you to replace your existing PC-based software, like Office 2019, with software-as-a-service (SaaS) programs like Office 365. Microsoft also encourages you to move your voice, video, chat, and texting to Microsoft's Azure Communication Services even if you don't use Teams. With SaaS programs, Microsoft doesn't care what operating system you're running. They're still going to get paid whether you run Office 365 on Windows, a Chromebook, or, yes, Linux.

I see two possible paths ahead for Windows. First, there's Linux-based Windows. It simply makes financial sense. Or, the existing Windows desktop being replaced by the Windows Virtual Desktop or other Desktop-as-a-Service (DaaS) offerings.... Google chose to save money and increase security by using Linux as the basis for Chrome OS. This worked out really well for Google. It can for Microsoft with — let's take a blast from the past — and call it Lindows as well.

Americans Are Drinking More Alcohol Than in 2019 (axios.com) 80

Americans reported drinking alcohol more frequently and in higher quantities since last year, according to a study published in JAMA. From a report: Excessive alcohol consumption may cause or worsen mental health problems, such as anxiety or depression. Experts have also warned the stress of the pandemic has fomented alcohol and drug abuse. The greatest changes were among women and people 30 to 59 years old. On average, alcohol was consumed one day more per month by three of four adults. Frequency of alcohol consumption for women increased by 17%. Heavy drinking among women -- four or more drinks within a few hours -- spiked 41% since 2019. Adults aged 30 to 59 years increased their drinking by 19% since last year.

But blockchain, on the other hand: it's the technology behind bitcoin, which makes it cool. Blockchain generalises the bitcoin pitch: let's not just get rid of banks, but also the land registry, voting machines, insurance companies, Facebook, Uber, Amazon, the Lung Foundation, the porn industry and government and businesses in general. They are superfluous, thanks to the blockchain. Power to the users...!

The only thing is that there's a huge gap between promise and reality. It seems that blockchain sounds best in a PowerPoint slide. Most blockchain projects don't make it past a press release, an inventory by Bloomberg showed... Out of over 86,000 blockchain projects that had been launched, 92% had been abandoned by the end of 2017, according to consultancy firm Deloitte. Why are they deciding to stop? Enlightened — and thus former — blockchain developer Mark van Cuijk explained: "You could also use a forklift to put a six-pack of beer on your kitchen counter. But it's just not very efficient...."

[I]nformation and communications technology is like the rest of the world — a big old mess. And that's something that we — outsiders, laypeople, non-tech geeks — simply refuse to accept. Councillors and managers think that problems — however large and fundamental they are — evaporate instantaneously thanks to technology they've heard about in a fancy PowerPoint presentation. How will it work? Who cares! Don't try to understand it, just reap the benefits!

This is the market for magic, and that market is big. Whether it's about blockchain, big data, cloud computing, AI or other buzzwords...

Maybe this is blockchain's greatest merit: it's an awareness campaign, albeit an expensive one. "Back-office management" isn't an item on the agenda in board meetings, but "blockchain" and "innovation" are... Yes, it took a few wild, unmet promises, but the result is that administrators are now interested in the boring subjects that help make the world run a bit more efficiently — nothing spectacular, just a bit better.

Johnnie Walker Maker Creates Plastic-Free Paper-Based Spirits Bottle (theguardian.com) 115

An anonymous reader quotes a report from The Guardian: The multinational drinks company Diageo says it has created the world's first paper-based spirits bottle that is 100% plastic-free. The company said it was aiming to launch the bottle early next year with its Johnnie Walker whisky brand in one market before rolling it out worldwide. The bottle is made from sustainably sourced pulp, complies with international food and drink safety standards and is fully recyclable. The contents are protected by a liner, made of resin rather than plastic, which holds the liquid but disintegrates when finished. The cap will be made of aluminum. The report notes that a paper beer bottle was unveiled last year by Danish brewer Carlsberg.

Should We Be Drinking Less? (nytimes.com) 174

Can a daily drink or two lead to better health? For many years, the federal government's influential dietary guidelines implied as much, saying there was evidence that moderate drinking could lower the risk of heart disease and reduce mortality. But now a committee of scientists that is helping to update the latest edition of the Dietary Guidelines for Americans is taking a harder stance on alcohol. From a report: The committee said in a recent conference call that it plans to recommend that men and women who drink limit themselves to a single serving of wine, beer or liquor per day. Do not drink because you think it will make you healthier, the committee says: It won't. And it maintains that drinking less is generally better for health than drinking more. That message is a departure from previous guidelines, which since 1980 have defined "moderate" drinking as up to two drinks a day for men and one for women. Government agencies have also long defined a standard drink as 12 ounces of regular beer, five ounces of wine, or one and a half ounces of distilled spirits (40 percent alcohol), amounts often exceeded in Americans' typical "drink."

Between 1990 and 2010, many editions of the guidelines, which are updated every five years, discouraged heavy drinking and warned pregnant women and people with certain medical conditions not to drink. But they also noted that moderate drinking was linked to fewer heart attacks and lower mortality. The 2010 guidelines mentioned that moderate drinking may even "help to keep cognitive function intact with age." The new recommendation would be a victory for experts who have long questioned the health halo around moderate drinking. They say that studies showing it can protect health are deeply flawed, and that any potential cardiovascular benefits would be outweighed by the fact that alcohol is a leading preventable cause of cancer. According to the National Cancer Institute, even one drink a day increases the risk of breast, esophageal and oral cancer. The new advice is not yet final. The advisory panel is expected to include it in a report that it will release publicly in mid-July and submit to the Department of Agriculture and the Department of Health and Human Services. Those two agencies are scheduled to publish the official dietary guidelines later this year.

Moderate Drinking May Improve Cognitive Health for Older Adults, Study Says (cnn.com) 129

"A new study found low to moderate drinking may improve cognitive function for White middle-aged or older adults," reports CNN: The findings support prior research which found that, generally, one standard drink a day for women and two a day for men -- which is the US guidance -- appears to offer some cognitive benefits... "There is now a lot of observational evidence showing that light to moderate alcohol drinking is associated with better cognitive function and a lower risk of dementia compared with alcohol abstaining," said senior principal research scientist Kaarin Anstey, a director of the NHMRC Dementia Centre for Research Collaboration in Australia, who was not involved in the study...

The new study, published Monday in JAMA Network Open, analyzed data on nearly 20,000 participants from the University of Michigan's Health and Retirement Study, a longitudinal panel study that surveys a representative sample of Americans on a variety of health issues. Study participants, who were predominately white, female and a mean age of 62, were given cognitive tests starting in 1996 through 2008, and were surveyed every other year for approximately nine years. When compared with those who said they never drank, low to moderate drinking was associated with significantly higher cognition scores for mental status, word recall and vocabulary over time, as well as with lower rates of decline in each of those areas.

But before you get too excited, CNN has a "However..." paragraph: However, a major global study released last year found that no amount of liquor, wine or beer is safe for your overall health. It found that alcohol was the leading risk factor for disease and premature death in men and women between the ages of 15 and 49 worldwide in 2016, accounting for nearly one in 10 deaths... "What we know for sure is that drinking too much alcohol definitely harms the brain in a major way. What is less clear is whether or not low to moderate intake may be protective in certain people, or if total abstinence is the most sound advice," said neurologist Dr. Richard Isaacson, founder of the Alzheimer's Prevention Clinic at NewYork-Presbyterian and Weill Cornell Medical Center. "Based on conflicting studies, I don't think at this time we can know for sure whether none versus low to moderate consumption is best in each individual person..."

Carlsberg and Coca-Cola Back Pioneering Project To Make Plant-Based Bottles (theguardian.com) 152

An anonymous reader quotes a report from The Guardian: A biochemicals company in the Netherlands hopes to kickstart investment in a pioneering project that hopes to make plastics from plant sugars rather than fossil fuels. The plans, devised by renewable chemicals company Avantium, have already won the support of beer-maker Carlsberg, which hopes to sell its pilsner in a cardboard bottle lined with an inner layer of plant plastic. Avantium's chief executive, Tom van Aken, says he hopes to greenlight a major investment in the world-leading bioplastics plant in the Netherlands by the end of the year. The project, which remains on track despite the coronavirus lockdown, is set to reveal partnerships with other food and drink companies later in the summer.

The project has the backing of Coca-Cola and Danone, which hope to secure the future of their bottled products by tackling the environmental damage caused by plastic pollution and a reliance on fossil fuels. [...] Avantium's plant plastic is designed to be resilient enough to contain carbonate drinks. Trials have shown that the plant plastic would decompose in one year using a composter, and a few years longer if left in normal outdoor conditions. But ideally, it should be recycled, said Van Aken. The bio-refinery plans to break down sustainable plant sugars into simple chemical structures that can then be rearranged to form a new plant-based plastic -- which could appear on supermarket shelves by 2023.

Startups Pursue 'Free Money' With Relief Funds, Prompting Backlash (nytimes.com) 100

Some young companies have turned to the government loans not for day-to-day survival but simply to buy useful time. From a report: Domio, a start-up that offers short-term rentals, has its headquarters in a New York City loft that features beer on tap, a game room and a wall of house slippers for visitors. The fast-growing and unprofitable company has raised $117 million in venture capital, including $100 million in August. When the coronavirus pandemic caused Domio's bookings to dry up last month, it laid off staff but did not ask its investors for more funding. Jay Roberts, Domio's chief executive, said it had no immediate need to raise more money and most likely had enough cash to last until 2021. Instead, Domio applied for a federal loan under the Paycheck Protection Program, the $349 billion plan to save jobs at small businesses during the outbreak. It received a loan on April 13. Three days later, the program's funding ran out, even as hundreds of hard-hit restaurants, hair salons and shops around the country missed out on the relief.

Questions about whether the funds were disbursed fairly and whether some applicants deserved them have drawn scrutiny to the aid program. Several companies that got millions of dollars in loans, such as the Shake Shack and Kura Sushi restaurant chains, faced criticism and eventually gave the money back. On Friday, President Trump signed legislation approving a fresh $320 billion to replenish the program, which the Small Business Administration is directing. Now, scrutiny of the program has reached technology start-ups like Domio. While many of these young companies have been hurt by the pandemic, they are not ailing in the same way that traditional small businesses are. Many mom-and-pop enterprises, which tend to employ hourly workers and operate on razor-thin margins, are shutting down immediately because of economic pain or begging for donations via GoFundMe campaigns. But start-ups, which last year raised more than $130 billion in funding, have sometimes turned to the government loans not for day-to-day survival but simply to buy useful time. In Silicon Valley parlance, they want to extend their "runway," or cash on hand, to a year or more. Many are backed by venture capital investors, who have accumulated record sums of capital -- $121 billion as of the start of this year -- that could be used to keep companies afloat.

The San Francisco Chronicle reports: Facebook plans to donate 720,000 masks — a combination of the coveted N95 respirators and more basic surgical masks — and 1.5 million pairs of gloves to health care workers around the world. Facebook officials said they bought the masks for their offices' emergency disaster kits following wildfires in California. Facebook has already donated 375,000 masks and 867,000 pairs of gloves to county officials in Alameda, Contra Costa, Marin, San Francisco, San Mateo, Santa Clara and Santa Cruz counties, who are expected to distribute them to hospitals...

Facebook also said it has donated $650,000 worth of food to more than a dozen Bay Area senior centers, schools and other organizations, including Food Runners SF, Peninsula Volunteers Meals on Wheels and the East Palo Alto Senior Center. Meanwhile, the company sent $250,000 to the Sequoia Union High School District in San Mateo County to pay for 2,000 Wi-Fi hotspots and a year of Wi-Fi for low-income students who need to complete their work online during shelter in place but don't have a reliable connection.

The company, which is the dominant employer in its headquarters city but also has large offices in San Francisco, Mountain View and other Bay Area cities, also pledged to give $500,000 to multiple homelessness prevention organizations in the Bay Area — and promised more local support.

The article notes America's scarcity of masks and other gear "became so dire in Washington state that medical workers made 500 masks out of vinyl, tape, foam and elastic purchased at Home Depot."

And it also has an update on how other companies are pitching in around America. "[F]actories that crank out cars and trucks were looking into making much-needed ventilators. Distilleries intended for beer, whiskey and rum transformed to instead turn out hand sanitizers and disinfectants. And an electronics maker that builds display screens was repurposed for surgical masks."

World Chess Champion Plays Recklessly Online Using a Pseudonym (slate.com) 54

World Chess Champion Magnus Carlsen has been sneaking onto online chess sites using stupid pseudonyms and taunting his opponents by using pointless maneuvers with names like "the Bongcloud." One YouTube commenter calls it "a revolution in the history of chess."

Slate documents the antics in an article titled "DrDrunkenstein's Reign of Terror." "DrDrunkenstein" is one of many aliases Magnus Carlsen has played under during the past two years, when he went on a killing spree across the speed chess tournaments of the internet. Since winter 2017, Carlsen has taken to livestreaming his games on a variety of platforms, which has provided a surprisingly entertaining window into the mind of an all-time great.

Lichess.org is a free, ad-less web platform for chess players, a favorite in the online chess community... Carlsen appeared incognito as "DannyTheDonkey" and won, donating his small prize money back to the website. Carlsen's first showing as DrDrunkenstein was in Lichess' second Titled Arena the following month... Carlsen streamed the games on Twitch, where he lived up to his username, pounding Coronas while bantering in Norwegian with his friends. Chess fans were astonished. There's something hypnotizing about watching a guy known as "the Mozart of chess" — a player who is quantifiably better than Bobby Fischer — taking a big gulp of beer, announcing his position as "completely winning," then singing along to Dr. Dre saying "motherfuck the police" while coasting into another quick checkmate...

In an interview with a Norwegian newspaper in October, Carlsen admits he quit drinking for his health. "I wouldn't say I was an alcoholic exactly," he said, "but I found out this year, if I'm going to travel and play a lot... I need to prioritize differently...." On the eve of his world championship defense, Carlsen appeared in the next tournament as "manwithavan," playing a large chunk of his games on a phone from a minivan, where the touch screen presented a massive handicap. He again earned the adoration of spectators, this time for riskily walking his king into the center of the board against one of the most dangerous players in the tournament. He came in third... As DrNykterstein, he alternated between two ways of wasting his early, important opening moves. Sometimes, he'd take his queen on a four-move tour of the board before swapping her home square with the king's, letting his opponent develop their pieces while he showboated... Other times, he'd fidget his knights back and forth from their starting squares, offering his challenger a six-move time advantage. In this tournament he filled with gags, he came in first again...

One of the sweetest benefits of watching these matches is enjoying Carlsen's dry, self-deprecating sense of humor — something no chess prodigy has any right to have.

In December, Magnus also reached the #1 spot, beating seven million other players, on a fantasy football table.

Featuring data and material from all 19 Smithsonian museums, nine research centers, libraries, archives and the National Zoo, the new digital depot encourages the public to not just view its contents, but use, reuse and transform them into just about anything they choose -- be it a postcard, a beer koozie or a pair of bootie shorts. And this gargantuan data dump is just the beginning. Throughout the rest of 2020, the Smithsonian will be rolling out another 200,000 or so images, with more to come as the Institution continues to digitize its collection of 155 million items and counting.

Japan's first robot bartender has begun serving up drinks in a Tokyo pub in a test that could usher in a wave of automation in restaurants and shops struggling to hire staff in an aging society. From a report: The repurposed industrial robot serves drinks in is own corner of a Japanese pub operated by restaurant chain Yoronotaki. An attached tablet computer face smiles as it chats about the weather while preparing orders. The robot, made by the company QBIT Robotics, can pour a beer in 40 seconds and mix a cocktail in a minute. It uses four cameras to monitors customers to analyze their expressions with artificial intelligence (AI) software. "I like it because dealing with people can be a hassle. With this you can just come and get drunk," Satoshi Harada, a restaurant worker said after ordering a drink. "If they could make it a little quicker it would be even better." Finding workers, especially in Japan's service sector, is set to get even more difficult.

Ready For Meat Grown From Animal Cells? A Startup Plans A Pilot Facility (npr.org) 111

Memphis Meats, a Berkeley, Calif.-based startup, says it's one step closer to bringing cell-based meat to consumers' mouths. From a report: The company plans to build a pilot production facility with funds raised from high-profile investors including Bill Gates, Richard Branson and Kimbal Musk, as well as two giant players in the animal protein and feed space, Cargill and Tyson Foods. The company says its latest funding round has brought in $161 million in new investment. "People thought this was all science fiction" when the company was founded back in 2015, Uma Valeti, the co-founder and CEO of Memphis Meats, told NPR in an interview at the company's headquarters. "Everything that we've done at Memphis Meats [has] started to show that this can be done," Valeti said. "This is real."

Interest in cell-based meat production and other meat alternatives has increased amid growing awareness of the environmental impact of traditional livestock agriculture. Valeti and his team walked us through the process of producing cell-based meat. It starts with the selection of specific types of animal cells that can grow to become meat. Next, the cells are fed and put in a "cultivator" -- similar to a fermenting tank â" where they can grow and form muscle and connective tissue. The process is analogous to the way breweries grow yeast cells to produce beer. Only here, they're growing animal cells.

Finnish Scientists Produce a Protein Made 'From Thin Air' (huffpost.com) 151

New submitter SysEngineer shares a report from HuffPost: A new protein made from air, water and renewable electricity could revolutionize our food system within the next decade. Developed by the Finnish company Solar Foods in a lab just outside Helsinki, the protein -- called Solein -- is made using living microbes that are then grown in a fermenter in a process similar to brewing beer. The microbes are fed with carbon dioxide, hydrogen, oxygen and nitrogen all taken from the air. This fermentation process, which takes place in huge vats, produces a liquid that is removed and dried to give the final product -- a yellow flour-like powder with multiple food uses.

If the electricity comes totally from renewables -- the aim is to use solar and wind -- the production process could produce virtually zero greenhouse gas emissions, the company says. It would also require far less land and far less water than traditional agriculture. Solar Foods says just 10 liters (2.1 gallons) of water is needed for every 1 kilogram (2.2 pounds) of Solein. To produce 1 kilogram of soy requires 2,500 liters (550 gallons) of water, a figure that rises to more than 15,000 liters (3,300 gallons) for 1 kilogram of beef.
The scientists say Solein has three applications: it can be used as a protein additive in existing foods; it could work as a way to help ingredients bind together; and it could also be used as an ingredient in plant-based meat alternatives.

Two Standard Alcoholic Drinks a Day No Longer Safe, Health Officials Say (theguardian.com) 170

It is no longer safe to have two standard drinks a day, Australian health officials have warned. From a report: Released just in time for Christmas, the National Health and Medical Research Council on Monday published a draft report which updated Australia's alcohol guidelines for the first time since 2009. The new guidelines warn that adults should have "no more than 10 standard drinks per week" to reduce the health risks from alcohol, or roughly 1.4 drinks a day. The maximum an adult should have on a single day is four standard drinks. The NHMRC's 2009 guidelines stated that "no more than two standard drinks" on any day -- or 14 a week -- reduced the lifetime risk of harm from alcohol. "This is a master class in comfy reassurance commercialism," writes Fast Company's Jeff Beer. "It's something we see all the time in advertising, where a product of convenience pitches itself as a problem-solver, simultaneously making you feel less guilty for needing it. Better meals. A cool, organized house. A clean house. Screen time. The emotional journey from haggard travel to family loss to inspirational kids, all set to the soundtrack from perhaps the most tear-inducing scene Pixar ever made? It's a sentimental super weapon."

And in Microsoft's holiday spot Lucy & the Reindeer (YouTube, 66K views), 6-year-old Lucy marches outside and uses her Mom's Surface and Microsoft Translator to question Santa's reindeer ("How do you guys fly? What does Santa do in the summer?") after seeing how Microsoft's Cloud solution enabled her Mom to close a big deal with her Japanese clients without having to understand a word of their language.

Man Kept Getting Drunk Without Drinking. Docs Found Brewer's Yeast In His Guts (arstechnica.com) 72

An anonymous reader quotes a report from Ars Technica: After years of inexplicably getting drunk without drinking alcohol, having mood swings and bouts of aggression, landing a DWI charge on the way to work one morning, and suffering a head injury in a drunken fall, an otherwise healthy 46-year-old North Carolina man finally got confirmation of having alcohol-fermenting yeasts overrunning his innards, getting him sloshed any time he ate carbohydrate-laden meals. Through the years, medical professionals and police officers refused to believe he hadn't been drinking. They assumed the man was lying to hide an alcohol problem. Meanwhile, he went to an untold number of psychiatrists, internists, neurologists, and gastroenterologists searching for answers.

Those answers only came after he sought help from a support group online and then contacted a group of researchers at Richmond University Medical Center in Staten Island, New York. By then, it was September of 2017 -- more than seven years after his saga began. The New York researchers finally confirmed that he had a rarely diagnosed condition called "auto-brewery syndrome." From there, the researchers started him on powerful anti-fungal medications to try to clear the boozy germs from his system. But he relapsed just weeks later after sneaking some forbidden pizza and soda. The researchers tried again, giving him an even stronger round of anti-fungal drugs, this time through a tube directly into his veins (central catheter). By February of 2018, tests indicated he was free of the fermenting fungi. He went back to eating his normal diet and passed his daily breathalyzer tests. He has stayed that way since, the researchers report.
